You’re printing contact sheets correctly, but, as you suggest, iPhoto doesn’t allow you to print titles or filenames on these images. Here’s a way around it.

Once you’ve created the contact sheet, rename it, move it to a permanent location on your hard drive, and then print and/or e-mail it as you wish.
